How many are addicts of Pinterest?
I love the Wisconsin Cauliflower Soup at Cafe Zupas.
My daughter sent me a recipe for the Wisconsin Cauliflower Soup from a blog
that she follows Utah Deal Diva.
As it used to be I would either have to print this out or somehow try to remember
through favorites on my computer.
But now with Pinterest all I have to do it Pin It.
I can go back anytime I want to make this.
I have a picture that really helps me remember why I Pinned This.
Not all my Pins from Pinterest have not always looked like the pictures.
I’m not saying that is their fault.
I’m sure it is my way of doing it that has completely messed it up.
So now I’m going to start putting on my blog the
Success and Failures I have with Pinterest.
So now let’s start out with this one.
Wisconsin Cauliflower Soup
I try to have all the ingredients ready and accessible.
2 Tbs. butter
1 medium onion, chopped
1/4 cup flour
1/2 tsp. salt
2 cups whole milk*
1 1/2 cups water*
1 can chicken broth
1 head cauliflower, cut into 1″ chunks
1 tsp. Dijon mustard
1 cup sharp cheddar cheese. shredded
1 cup Pepper Jack cheese, shredded
*Can substitute 1 can (12 oz. ) evaporated milk and 2 cups water
In large saucepan, melt butter over medium heat.
Add onion and cook until golden, about 10 minutes, stirring occasionally.
Whisk in flour and salt.
Gradually stir in milk, chicken broth, and water.
Add cauliflower and heat to boiling over high heat. Reduce heat to low; cover and simmer until cauliflower is tender, about 15 minutes.
Sorry I was so worried about getting this right I forgot to take a picture of putting in blender.
It wasn’t hard though and didn’t take that long.
In blender (with center cover removed to allow steam to escape), blend cauliflower mixture at low speed in small batches until very smooth.
Return cauliflower mixture back to pan; heat over medium heat until hot, stirring occasionally. Remove pan from heat.
stir in mustard and 1 1/2 cups cheese until melted and smooth.
I used the Pepper Jack Cheese and Colby Jack Cheese.
Everyone loved it but when I do it again I will use the cheeses in this proportion.
1/2 cup Pepper Jack Cheese
1 1/2 cups Colby Jack Cheese.
I considered this a success.
